Egg Muffins

I tried these in the large muffin pan and then put them in the freezer. I usually take these out the morning before I plan on eating them so they have time to defrost. They make a great start to my day and keep me full for a good 3 hours.

Ingredients

  • 2 tablespoons olive oil
  • 12 large eggs
  • 2 medium zucchini
  • 1 bell pepper
  • 1 green onion (optional)
  • 3 cups fresh spinach
  • 1 cup cooked ham

Directions
  1. Preheat oven to 350 degrees F (175 degrees C). 
  2. Grease two muffin pans with olive oil.
  3. In a large bowl, whisk eggs well.
  4. In a food processor, process zucchini, pepper, and green onion (if using) until finely chopped, but not smooth.
  5. Add chopped vegetables to the eggs.
  6. Finely chop spinach in the food processor and add to the egg mixture.
  7. Stir in the ham and mix well.
  8. Fill the muffin pans halfway with egg mixture.
  9. Bake for 20-25 minutes or until the eggs are set in the middle

Guacamole

​Ingredients
  • 4 ripe avocados
  • 2 vine-ripe tomatoes, diced
  • ½ cup diced green onions
  • 1 tablespoon diced jalapeno peppers
  • 2 cloves garlic, diced
  • Juice of 1 lime
  • Black pepper, to taste
Directions

  1. Scoop out the flesh of the avocados and place in a small bowl. Mash the avocado with a fork.
  2. Add the tomatoes, onions, jalapenos, and garlic. Mix together.
  3. Squeeze on fresh lime juice and mix.
  4. Add black pepper to taste.

Easy Slow Cooker Pork Tenderloin

Ingredients:

  • 1 pound lean pork loin, whole
  • 1 (28 oz) can diced tomatoes, no salt added
  • 3 medium zucchinis, diced
  • 4 cups cauliflower florets
  • Chopped fresh basil, to taste
  • Garlic, to taste


Directions:
  1. Combine all ingredients in a slow cooker.
  2. Cook on low for 6-7 hours.

What I eat on Paleo...

If you're wondering what I eat, I'll tell you:

Eat:

  • Grass-fed meats ~ The reason you should eat grass fed is they have found to have the same problem in animals as they do with humans in regards to grains.
  • Fish ~ Best to get wild fish because there seems to be issues with farmed fish. I actually can taste the difference in wild vs farmed.
  • Fowl ~ Chicken, duck, turkey, hen
  • Eggs ~ Organic Omega-3 enriched
  • Healthful Oils ~ Olive, Walnut, Flaxseed, Macadamia, Avocado, Coconut!!!
  • Vegetables ~ I stay with as many green veggies as I can but all are just as great!
  • Fruits ~ I tend to stay away from fresh fruits because they tend to have a lot calories and some have a lot of sugar in them. If you're trying to lose weight then I'd suggest limiting.
  • Nuts and seeds ~ Tend to be higher in calories too but you're getting your good fats from them. Just don't over indulge!
Don't Eat:
  • Cereal grains
  • Legumes
  • Peanuts
  • Dairy
  • Refined Sugar
  • Potatoes
  • Processed foods
  • Salt
  • Refined vegetable oils

Limited Carbohydrates and Paleo

I've created this blog really for myself as an easy way to find recipes that I've come across and that I've made. Rather than keep the information to myself I've decided to make public in case anyone else might enjoy some of what I have found as well. My recipe approach will be moreso along the lines of a limited carbohydrate diet as well as paleo.
